The third wire on your current switch will be for the ground, and from my understanding JR Products is relying on the ground from the light to count as the ground in the second wire which is why they only have 2. I have a possible solution for you.
First, though, it isn't recommended to use a 1-1/4" hitch for bikes on a travel trailer because they aren't able to handle them.
Instead, your best bet is to upgrade your hitch to a 2" receiver. I recommend the Curt Adjustable Class III, part # C13701. It adjusts between 18" and 51". It fits box frames, C-channel frames, or I-beam frames. I've linked to a video review of it below.

Ok, we have some options for you, and I should note that bike racks do need to be approved by their manufacturer for the use on the back of travel trailers like your 2021 Lance 2185. Yes you can bypass the regulator on your trailer tank and go directly from the grill to your trailer's quick disconnect. What you're going to need is the MB Sturgis Propane Adapter Hose - Model 250 Quick-Disconnect # 100476-72-MBS and the MB Sturgis Sturgi-Stay T-Fitting # 103613-MBS.

I think I have the answer. I confirmed with Lets Go Aero that the Bikewing 2 B01311 should not be used on a travel trailer. We do not recommend using 1-1/4 inch receivers on travel trailers because a 1-1/4 inch bike rack/hitch combination is not very secure on a travel trailer shank with the added torque experienced at the end of a trailer during travel (especially with added bike weight).
